Our Chef de Cuisine takes advantage of the advantage of local, mostly organic produce. In the morning you'll find him strolling around the local markets, picking up bunches of vegetables or loading up his cool box with fresh tuna or Mahi-Mahi, dreaming about the dinner menu for that night.

Than there's the coconut, a corner stone of our cooking. Packed with healthy fats and healing properties, you'll find the flesh and luscious cream appearing in many of the dishes. Needless to say, our food is free of artificial additives of any kind. For example, the traditional green pancakes are coloured with an extract from a special leaf, found growing in our garden, desserts are sweetened with healthy and natural coconut sugar. All our vegetables are washed in spring water.
